Focaccia mit Süßkartoffel und Rosmarin {Sweet Potato and Rosemary Focaccia}

Wir sind mitten drin, mitten im Sommer. Juhuuu! In der Mittagspause sitze ich gemeinsam mit meinen Kolleginnen in der Sonne und ernähre mich quasi nur noch von Eiscreme. Von Magnum über Cornetto bis hin zu Capri habe ich sie schon alle durch, aber genug habe ich noch lange nicht! Abends freue ich mich dann immer nur noch auf einen leichten Snack. Meist fällt mir da nur Salat ein und damit der jetzt mal ein bisschen aufgepeppt wird, habe ich das passende Beiwerk dazu gebacken. Ein wunderbar herzhaftes Focaccia mit Süßkartoffeln und Rosmarin on Top. Mal was anderes und ganz bestimmt nicht langweilig. Und als Nachtisch passt dann bestimmt noch ein Eis rein... man isst ja schließlich nur Salat!

We are in the middle, the middle of summer. Yeah! During lunch break I sit together with my colleagues in the sun and we eat almost ice cream almost every day. Magnum, Cornetto or Capri I had them all, but I still can't get enough! In the evenings I just need a light snack, mostly I choose a salad. Well I have to admit, just salad gets me bored a little bit. Therfore I tried to refresh it a bit with wonderfully hearty focaccia. Something that goes well with a salad and is certainly not boring because it comes with sweet potatoes and rosemary on top. And for dessert I can still eat some ice cream... because I only had salad!
 


 
Zutaten 
Für 10 bis 12 Portionen
Für den Teig:
1 kg Mehl
1 Päckchen Trockenhefe (etwa 7g)
Meersalz

Olivenöl
Für den Belag:
Olivenöl
eine große süße Kartoffel
200g grüne oder schwarze Oliven (entsteint​​)
4 Zweige frischer Rosmarin, Blätter gepflückt
1 Knoblauchzehe

Salz 
Pfeffer 

So wird's gemacht
Mehl, Hefe und 1 Esslöffel Salz in eine große Schüssel geben, alles vermischen und eine Vertiefung in der Mitte machen. 650ml lauwarmes Wasser in die Mitte geben und anfangs durch Rühren dann durch kneten mit den Händen, alles zu einem glatten Teig verkneten. Den Teig mit einem feuchten Geschirrtuch abdecken und an einem warmen Ort für ca. 1 Stunde zu gehen lassen, oder bis er sich verdoppelt hat.

Die Süßkartoffel schälen und in dünne Scheiben schneiden. In einem Topf mit Salzwasser ca. 10 bis 15 Minuten gar kochen. Währenddessen die Oliven in Ringe schneiden und die Hälfte des Rosmarins fein hacken. Rosmarin und Oliven jetzt unter den bereits aufgegangen Teig kneten bis alles gut verteilt ist. Eine feuerfeste Form gut ausfetten und den Teig hineingeben und nochmals für ca. 30 Minuten gehen lassen. 

Inzwischen Backofen auf 200 º C/400 º F / Gas 6 vorheizen. Restlicher Rosmarin mit 3 bis 4 EL Olivenöl und einer fein gehackten Knoblauchzehe in einer Schale gut miteinander vermischen.
 
Die Süßkartoffelscheiben auf dem Teig verteilen. Die Rosmarin-Öl-Mischung über die Kartoffelscheiben geben und mit Salz und Pfeffer würzen. Das Brot im Ofen für ca. 25 bis 30 Minuten, oder bis es goldbraun ist backen.

Tipp: Ich habe 500g Weizenmehl und 500g Roggenvollkornmehl verwendet. So wird das Focaccia etwas
dunkler und schmeckt richtig herzhaft.

Ingredients 
Serves 10 to 12
For the dough:
1 kg strong bread flour
1 x 7 g sachet of dried yeast
sea salt
freshly ground black pepper
extra virgin olive oil
For the topping: olive oil
one big sweet potato

200g green or black olives (no stones) 4 sprigs of fresh rosemary, leaves picked 1 bulb of garlic 

How to
Put the flour, yeast and 1 tablespoon of salt in a large bowl. Stir to combine. Add 650ml of lukewarm water and mix all first with a spoon and later knead all with your hands until it becomes a smooth dough.
Place the dough in a bowl, cover with a damp towel and leave it in a warm place for around 1 hour, or until it has doubled in size. 

Peel the sweet potato and cut it into thin slices. Cook it in a pot with salted water for about 10 to 15 minutes. Meanwhile, cut the olives into rings and chop half of the rosemary. Knead the rosemary and the olives together with the now doubled dough until everything is mixed well. Lightly grease a large baking tray and place the dough in it, let all rise again for about 30 minutes

Meanwhile preheat the oven to 200 º C/400 º F / gas 6th. Mix in a bowl the remaining rosemary with 3 to 4 tablespoons of olive oil and a finely chopped clove of garlic. Now arrange the sweet potato slices on the dough. Cover the potatoes with the rosemary oil mixture and season with salt and pepper. Bake the bread for about 25 to 30 minutes in the oven, or until it is golden brown.

Tip: I used 500g white flour and 500g whole wheat flour. This made the focaccia slightly darker but it  tastes really hearty.
