American Week - Bagels mit Blaubeeren {Blueberry Bagels}

Ich freue mich ganz unglaublich. Morgen geht’s ab nach New York City. Zwar werde ich nicht lange bleiben können, aber da ich schon öfter in der Stadt war, müssen die üblichen Sehenswürdigkeiten nicht mehr abgegrast werden und es bleibt genug Zeit für einen langen Spaziergang im Central Park, shoppen in SoHo, eine Fahrt mit der Fähre und natürlich in meinen Lieblingsrestaurants essen gehen! Passend zu diesem Anlass gibt es bei mir die American Week. Eine Woche voll amerikanischer Köstlichkeiten. Denn die Ammis haben mehr zu bieten als Burger und Fast Food. Ich hoffe es gefällt euch. Nach dem mit Pumpkin Pie den ihr euch HIER anschauen könne, geht es heute weiter mit Blueberry Bagels.

I'm very excited. Tomorrow we go to New York City. I will not be able to stay long but that’s not a problem at all. Because of my work as a flight attendant, I visited the city several times before so that I have seen all the usual sights already. Therefore I will have enough time to enjoy the city in my personal way: going for a long walk in Central Park, shopping in Soho, taking a ride with the fair and of course having dinner in my favorite restaurants! And here on my blog it will be all about the American way of eating, too. A week full of American delicacies. The American culture has a lot more to offer than just burgers and fast food. I hope you like it. Last time I introduced to you the American Pumpkin Pie (click HERE). Today it is all about Blueberry Bagels.

Blueberry Bagels
Zutaten für ca. 12 Stück
½ Würfel frische Hefe ca. 12g
80 gZucker
500 g Mehl
1 TL Salz
2 TL Zimt gemahlen
1 Eiweiß
70 Gramm Blaubeeren
Mehl zum kneten

So wird’s gemacht
Die Hefe zerbröckeln und in 280 ml lauwarmem Wasser auflösen. Je 1 EL Zucker und Mehl dazugeben, unterrühren und das Hefewasser etwa 15 Minuten stehen lassen, bis es schäumt. Inzwischen restlichen Zucker, Mehl, Salz, Zimt und das Eiweiß in eine Schüssel geben, die Hefemischung dazugießen und alles erst mit den Knethaken des Handrührers, dann mit den Händen zu einem glatten Teig verkneten. Den Teig zugedeckt etwa 45 Minuten an einem warmen Ort gehen lassen, bis er sein Volumen etwa verdoppelt hat.

Den Teig noch einmal mit den Händen auf wenig Mehl durchkneten, dabei die Blaubeeren unterarbeiten. Den Teig in 12 Portionen teilen und jede Portion erst zu einer Kugel formen, dann ein Loch in die Mitte bohren. Die Bagels noch einmal etwa 20 Minuten abgedeckt gehen lassen.

Inzwischen einen großen Topf mit Wasser aufkochen. Den Backofen auf 200 Grad, Umluft 180 Grad, Gas Stufe 4 vorheizen. Die Bagels portionsweise in das kochende Wasser geben und etwa 30 Sekunden darin schwimmen lassen, dann wenden und die andere Seite ebenfalls etwa 30 Sekunden brühen.

Bagels mit einer Schaumkelle aus dem Wasser heben und kurz auf einem Rost abtropfen lassen. Dann auf mit Backpapier ausgelegte Backbleche setzen und im vorgeheizten Ofen etwa 12–15 Minuten goldbraun backen. Abkühlen lassen und mit Butter oder Frischkäse servieren.
 


Blueberry Bagels
Serves 12 pieces

½ cube of fresh yeast 12g
80 g sugar
500 g flour
1 tsp salt
2 tsp ground cinnamon
1 egg white
70 grams of blueberries
To knead flour


How it's done
Crumble the yeast and dissolve in 280 ml of lukewarm water. Stir in 1 tbsp sugar and the flour and let the yeast rise for about 15 minutes. Now mix the remaining sugar, flour, salt, cinnamon and egg whites in a bowl, pour in the yeast mixture and knead the dough with the hand mixer to form a smooth dough. Cover the dough and let it rest about 45 minutes in a warm place until it has doubled in volume.

Knead the dough again with a little flour on your hands and work the blueberries under the dough. Divide the dough into 12 portions and form each portion into a ball and press a hole in the middle with your fingers. Let the bagels rest again for 20 minutes.

Meanwhile, boil a large pot of water. Preheat the oven to 200 degrees, convection oven 180 degrees, gas mark 4. Add the bagels one by one to the boiling water and cook them for about 30 seconds from each side.

Lift the Bagels with a slotted spoon out of the water and let them drain briefly on a rack. Then put them on a backing tray lined with baking paper and bake for 12 to 15 minutes or until golden brown. Let cool and serve with butter or cream cheese.
