Beeren-Joghurt-Torte - VEGAN DAYS {Yogurt Berry Tart - VEGAN DAYS}


Zum Geburtstag habe ich das vegane Kochbuch „Vegan for Fit“ von Attila Hildmann bekommen. Nun, als bekennende Fleisch- und Milchliebhaberin habe ich mich nur mäßig darüber gefreut, denn ich stehe dem veganen Trend eher skeptisch gegenüber. Aber da man etwas erst beurteilen kann, wenn man es selbst getestet hat, muss ich diese „Vegan-Sache“ wohl mal genauer unter die Lupe nehmen. Gesagt getan: Mittlerweile bin ich schon seit vier Wochen Veganerin und es fällt mir wesentlich leichter als ich dachte. Ich  muss ehrlicherweise zugeben, dass ich mich schon sehr freue wieder Camembert, Gorgonzola und  Vollmilchschokolade essen zu dürfen. Ein Leben lang darauf zu verzichten könnte ich mir dann doch nicht vorstellen.




My birthday present was a vegan cookbook. “Vegan for Fit” is by the German vegan guru Attila Hildmann. At first I was skeptical, because I thought that this is the perfect present for tree huggers and not for a meat lover like I am. But I thought I have to take a closer look on this “vegan thing” because one can only judge things he tested himself. Long story short, today I can celebrate nearly four weeks of vegan living. The interesting thing is that it wasn’t even hard for me. You just need some time for cooking and preparing things for your lunch break in the office, but that’s mostly it. But to be honest, I can't wai to eat cheese, joghurt and chocolate again. More vegan recipes can befound HERE.



Heute präsentiere ich euch zur Abwechslung mal ein Rezept für den Kaffeeklatsch mit den Freundinnen. Eine leckere Beerentorte, die auch Nicht-Veganern schmeckt. Meine ganze Familie hat's bestätigt: "Ja, auch für Nicht-Veganer ein Gaumenschmaus". Die Torte ist ein Traum und schmeckte auch so. Einziger Wermutstropfen, der "Beerentraum" ist etwas weich gewesen. Daher konnte man die einzelnen Tortenstücke nicht so schön auf die Teller angeben. Auf gut Deutsch: es war eine ziemliche Sauerei. Aber geschmeckt hats super!



Zutaten für eine Springform d = 23cm
Zubereitungszeit: 30 Minuten
Kühlzeit: 3 Stunden
Für den Boden
75g Mandeln, geröstet, gemahlen
50g Amaranth, gepoppt
70g Agavendicksaft
1 Msp. Gemahlene Vanille
1 Prise Salz
40g dunkles Mandelmus

Für die Füllung
16g Agar-Agar
130g Agavendicksaft
1kg Sojajoghurt
Saft einer Orange

Für das Beerentopping
250g Himbeeren
250g Erdbeeren
125g Heidelbeeren
2 El. Agavendicksaft

So wird’s gemacht
Alle Zutaten für den Boden in einer Schüssel mit einer Gabel gut vermischen. Den Boden einer Springform mit Backpapier auslegen und die Masse mit den Händen auf dem Boden verteilen und fest andrücken.

Für die Füllung den Saft der Orange auspressen, mit dem Agar-Agar und dem Agavendicksaft verrühren. Hier sollte man schnell sein, sonst bilden sich Klümpchen. Das Ganze in einem Topf kurz aufkochen, vom Herd nehmen und den Joghurt schnell unterrühren. Joghurtmasse auf dem Boden verteilen und für ca. 30 Minuten in den Tiefkühler geben. Danach herausholen und gekühlt, für ca. 2 bis 3 Stunden fest werden lassen.

Für das Topping, Beeren waschen, Erdbeeren vierteln und 200g der Himbeeren mit dem Agavendicksaft pürieren. Wenn der Kuchen fest geworden ist, die Himbeercreme auf der Joghurt Torte vorsichtig verstreichen und die restlichen Beeren darauf verteilen.

Tipp: Mit dem Agar-Agar sollte man es genau nehmen, sonst wird der Kuchen nicht fest. Bei mir war er etwas zu weich und daher habe ich die Rezeptangaben ein wenig verändert. Sollte der Kuchen bei euch nun zu fest werden, würde ich mich über eine Rückmeldung von euch freuen.





Ingredients for a spring-form pan, diameter: 23cm
Preparation time: 30 minutes
Cooling time: 3 hours

For the base
75g almonds, roasted, grounded
50g amaranth, popped
70g agave syrup
1 pinch of vanilla, grounded
1 pinch of salt
40g dark almond paste

For the filling
16g agar-agar
130g agave syrup
1kg soy yogurt
Juice of one orange

For the Berry Topping
250g raspberries
250g strawberries
125g blueberries
2 tbsp. agave syrup
 


How to
Put all ingredients for the base in a bowl and mix them well with a fork. Line the bottom of a spring-form pan with baking paper and spread the dough with the hands onto the bottom of the from.

For the filling, mix the juice of one orange with the agar-agar and the agave syrup. Try to be quick otherwise the mixture will get lumps. Bring all to the boil in a pot briefly, remove from heat and stir in the yogurt quickly. Spread the yogurt on the dough and put all for about 30 minutes into the freezer. After that, leave it in the fridge for about 2 to 3 hours.

For the topping, wash the berries, slice the strawberries into quarters and purée 200g of raspberries with agave syrup. When the cake is tough gently spread the raspberry cream on top of it and add the remaining berries on it.

Tip: Use the agar-agar carefully and as recommended in the recipe otherwise the cake will not become tough. My version was a little too soft, so I've changed the recipe a little bit. I would appreciate to hear from your experiences.

Biene. Diise Torte sieht super Klasse aus. Und die hast du wirklich gut in Szene gesetzt ich gebe Moonstruck vollkommen recht. Aber Sie schmeckt auch suuuuuper lecker-
